A generous continental breakfast buffet, plus eggs to order, is served in the restaurant or summer courtyard. The young and creative Pablo Sabariego works closely with Piedmont’s Michelin-starred Ugo Alciati to head up L’Assaggio (mains €40-60 [£35-53]; open Tuesday to Saturday).
The produce is extraordinary: Alba white truffles, sun-rich olive oil from Basilicata in Italy’s hot south, milk-fed veal gently cooked for 10 hours at 54˚C to create the chef’s signature vitello tonnato, meat-stuffed agnolotti served both in a sauce and sauce-less in a cloth napkin (to be eaten with the fingers, as was Sunday tradition for centuries in Piedmont).
In the bar, evocative of a palazzo with its imposing collection of heavy gilt-framed oil portraits, Mauritian barman Suneildrasingh shakes an excellent Assaggio cocktail (champagne, cognac, Grand Marnier and Angostura bitters) and enticing Italian aperitifs. Salads, pizza, pasta and light bar snacks are served all day and Wednesday evenings usher in a sensational Italian aperitivi – a banquet of gourmet nibbles with wine and cocktail pairings (from €39 [£35]).
